Chocolatey Protein Balls…

So it’s the weekend and I don’t know about you but I always am a little more relaxed on the weekend.

Brunch is a definite winner on a Saturday or Sunday morning… scramby or poached eggs are my absolute fav.

Below is a recipe for weekend treats.

These come with a warning though. They are seriously like crack. Make at your own peril.

INGREDIENTS

6 tbsp nut or seed butter of your choice
1/4 cup of protein powder (I use vanilla)
4 tbsp cacao powder
2 tbsp softened coconut oil
1 tbsp chia seed
1 tbsp honey (or a few drops of Stevia)
1 tsp pure vanilla extract
Pinch of salt
Unsweetened desiccated coconut for rolling

METHOD

Mix all the ingredients together thoroughly.
Add some water if it’s too thick and not combining well.

Also, put in fridge if the mixture is too soft.

Roll tablespoons of the mixture into evenly sized balls and then roll in the coconut.
Place in fridge to set.

Et voila.

If you can keep these in the fridge for more than three days you are a much better human being than me.
